Ingredients

  • 1/4 cup of almond meal
  • 1/4 cup coconut flour
  • 20g Plent Marine Collagen Unflavoured (or Chocolate Dream for a delicious chocolate flavour)
  • 1/4 tsp cinnamon
  • pinch of sea salt
  • 2 eggs (at room temperature)
  • 1/4 cup unsweetened almond milk
  • 1/4 cup almond butter
  • 1/4 cup raw honey
  • 1 tbsp MCT oil
  • 1/4 tsp vanilla extract
  • coconut oil for frying

Instructions

  1. Heat a frying pan over low heat with a little coconut oil.
  2. In a bowl, mix the almond flour, coconut flour, collagen, cinnamon and sea salt together.
  3. In a separate bowl, mix the eggs, almond milk, almond butter, honey, coconut oil and vanilla extract well together.
  4. Mix all ingredients together to a smooth batter.
  5. Pour ¼ cup batter into the pan.
  6. Once the batter starts to bubble, turn the pancake over and cook for another 2 minutes.
  7. Bake until all the batter is used up and enjoy!
